Ingredients

RICE: Basmati Rice

AWADHI BIRYANI MASALA PASTE (NON-EMULSIFIED SAUCE): Curd, Water, Brown Onion (Onion, Refined Sunflower Oil), Edible Vegetable Oil (Refined Sunflower Oil), Edible Common Salt, Ginger, Garlic, Garam Masala Powder (Soy), Rose Water (2%), Kewra Water, Green Cardamom Powder (0.8%), Flavour Enhancer (INS 627, INS 631), Mace Powder (0.3%), Acidity Regulator (INS 330), Turmeric Powder and Saffron (0.007%)

WHOLE SPICES (SEASONING): Cinnamon Stick, Green Cardamom (20%), Clove, Bay Leaf , Black Pepper

Cooking Instructions

To get started you will need: Kohinoor Authentic Basmati Biryani Kit, 2 sliced onions, 1 tbsp salt, 150ml of stock/water, 500 gms of vegetables or chicken/meat pieces, oil for frying, chopped fresh coriander and mint leaves – 3 tsp each, 2 slit green chilies, 1 tbsp desi ghee

3 Simple Steps

Step 1 – Rice Preparation – Wash Kohinoor Authentic Basmati Rice in running water thrice, soak it for 30 minutes. Boil 1 litre of water with salt and whole spices from the pack. Let it simmer for 2-3 minutes. Strain the soaked rice and add to boiling water. Cook till half done (approx. 5-7 minutes). Drain the rice and keep aside.

Step 2 – Biryani Masala Preparation – Heat oil and shallow-fry sliced onions to golden brown and keep aside. While the rice is cooling, mix & cook Authentic Biryani Masala in a pan with vegetables or chicken/meat. Add stock/water and cook for 15 minutes till tender and oil separates.

Step 3 – Assembly - Layer half the quantity of cooked rice and sprinkle half the quantity of fried onions, cooked vegetables or chicken/meat, mint and coriander and slit green chilies. Repeat the layering. Pour desi ghee over the rice. Cover and cook on dum for 10 minutes on low heat. Serve hot with raita and salan.

Optional - Use fried cashewnut and raisins (2 tbsp each) and 5-6 strands of saffron soaked in milk along with 1 tbsp each of rose and kewra water during layering
