Sheermal is traditional, saffron flavoured flat bread and is a rare delicacy in the regions of Lucknow and Hyderabad. It is mildly sweet in taste and is sometimes enjoyed with Lucknow Kebabs but can also be served as a standalone dish. 

• 3 1/4 cups all-purpose flour (maida)
• 1/4 tsp saffron
• 1 tsp Yeast
• 1 tbsp sugar
• 2 tbsp sugar
• 2 eggs (Yolk)
• 1/2 cup milk
• 1 tsp salt
• 1 tsp ginger powder
• 1/2 cup vegetable oil
• Sesame Seeds
• Combine yeast, 1 tbsp sugar with 1/2 cup of warm water. Stir until well mixed and allow it to rest for few minutes.
• In another bowl, whisk 2 tbsp sugar and an egg yolk.
• Add milk to the mixture and continue whisking.
• Add salt, ginger powder, and vegetable oil. Stir well.
• Add the mixture to the yeast bowl and stir thoroughly.
• Mix the flour in gradually.
• Knead for 7 minutes.
• Cover the bowl with a lid or plastic wrap and allow it to rise for about an hour.
• Take a fistful of the batter and flatten to an oval shape, and place them on a well-floured bake ware.
• Brush the sheermals surface with an egg yolk.
• Sprinkle sheermals with sesame seeds.
• Preheat oven to 176º C, and bake sheermals for 35 to 40 minutes.
