Apple Kheer

Apple Kheer - Surprise your guest with apple kheer. It can be used during the fast & festivals also.

  • Milk (full cream) - 1 litre/5 cups
  • Saffron -1 pinch
  • Apple - 400 grams (2 Apples of medium size)
  • Sugar - 75 grams (1/3 cup)
  • 7-8 Cashew nuts
  • 20-25 Raisin
  • 7-8 Pistachio
  • 4-5 Elaichi (Cardamom)
  • Ghee - 2 tbsp.
  • Pour milk into a kadhai with a thick base and turn on the gas. Once the milk comes to boil, stir it with the help of a spoon and boil till the level of milk decreases. Stir milk using the spoon regularly to avoid it from sticking to the base of the kadhai.
  • Cut cashew nuts into 7-8 pieces. Wash raisins and break off the stems. Chop pistachios evenly, peel elaichi and grind.
  • Wash, peel apples and after removing the hard mid portion, grate them.
  • Take a sauce pot , heat it then add the ghee and then sauté the grated apple then add the boil the milk and cook it for 10 minutes in slow flame then add the sugar and cook it while stirring the spatula mix well. Now keep stirring the kheer till it comes to boil.
  • As the kheer gets thicker and the apples are cooking and the two become indistinguishable, add the saffron and Cook kheer for 2-3 minutes more while stirring regularly. Apple Kheer is now ready, turn off the gas. Add crushed cardamom to kheer and mix.
  • Pour the kheer into bowls and garnish with finely chopped pistachio and cashew nuts. Apple Kheer can be served hot or cold as desired.
