This Barley Salad is healthy as well as delicious a snack that requires very less time to make and is perfectly filling too. The vegetables contribute to the health-quotient while the garnishing cheese adds to the taste.

  • 1 1/2 cups uncooked barley 
  • 1 cup fresh corn kernels 
  • 1 cup diced seeded plum tomato 
  • 1/2 cup chopped green onions 
  • 1/4 cup chopped fresh flat-leaf parsley 
  • 20 olives, pitted and coarsely chopped 
  • 3 tablespoons fresh lemon juice 
  • 2 tablespoons olive oil 
  • 1/4 teaspoon salt 
  • 1/4 teaspoon freshly ground black pepper 
  • 1 garlic clove, minced 
  • 3/4 cup (85g) crumbled feta cheese 
  • Cook barley according to package directions without the salt 
  • Rinse with cold water and drain completely 
  • Combine barley, corn, tomato, green onions, parsley and olives in a bowl. 
  • Combine lemon juice with olive oil, salt, pepper and garlic stirring well with a whisk
  • Drizzle over the barley mixture. 
  • Toss to coat and sprinkle with cheese
