Bring in a hint of Mexico on your table with this very interesting recipe. This recipe can even be made with left over rice and chicken making this all the more convenient and tasty!

  • 2 chicken breasts (cooked and chopped)
  • 4 servings cooked brown rice (2 cups uncooked=4 cups cooked)
  • 1 can corn, drained and rinsed
  • 1 can black beans, drained and rinsed
  • ½ cup low fat yogurt (sour cream works too)
  • ½ cup salsa
  • 1 cup reduced fat Mexican blend shredded cheese 
  • Cook chicken and rice first (or use leftover previously cooked).
  • Once all ingredients are cooked, mix all together in a bowl and transfer to a baking dish. 
  • Sprinkle a bit of cheese on top. Bake at 180 degree C for 25 minutes.
