Quick and easy to make. Healthy to eat. While raw spinach tossed in olive oil provides your body with apt amount of iron, it also helps cleanse your liver. On the other hand, lemon and pepper dressing bring a complete flavor for your palette. You could also make wonderful and healthy additions to this salad by adding sliced strawberries, orange segments, sliced avocado or toasted pecans or walnuts. 

  • 1/2 cup olive oil 
  • 2 tablespoons vinegar 
  • 1 tablespoon sugar 
  • 2 teaspoons lemon & pepper seasoning 
  • 11 to 12 ounces spinach leaves 
  • 1 cup sliced mushrooms 
  • Crumbled bacon or bacon-flavored bits 
  • Chopped hard-cooked eggs, sliced red onion and croutons (optional) 
  • Mix olive oil, vinegar, sugar and Seasoning in small bowl with wire whisk until well blended. 
  • Toss spinach and mushrooms in large bowl. Top with bacon, eggs, red onion and croutons, if desired. Serve with dressing.
