Sweet Rice or Sakarai, popularly known as Meetha Chaawal, is a sweet Rice delicacy with an exquisite aroma that emerges from an exotic blend of Saffron, Cinnamon, Cloves and Bayleaves. This traditional dish is served as ‘Naivedyam' (an auspicious sweet offering) during the Tamil festival of Pongal.

  • Basmati Rice - 1 cup
  • Hot Water - 2 cups
  • Jaggery - 3/4 cup
  • Ghee/Clarified Butter - 1.5 tbsp
  • Cashews - 1 tbsp
  • Golden Raisins - 1 tbsp
  • Saffron - a pinch
  • Orange Zest - 1/2 tsp
  • Cardamom Powder - 1/4 tsp
  • Add Jaggery to hot Water, mix well and allow it to dilute with the water.
  • In a small skhillet, heat Ghee on medium heat.
  • Once hot, add in the Cashews and Golden Raisins.
  • All Cashews should get a little color and Raisins should plump up.
  • Pour the resulting mix into the rice cooker.
  • Add the following to the rice cooker: washed, soaked and drained Rice, Saffron and Orange Zest.
  • Use a sieve and strain the Jaggery Water to the Rice cooker.
  • Mix well and cook as per the Rice cooker instructions.
  • Once done, fluff with a fork and remove the Rice from the cooker.
  • Top with Cardamom Powder and serve hot!
