Vegetable Samosa - A samosa is a fried or baked pastry with a savory filling, such as spiced potatoes, onions, peas

For the crust:
  • 2 cups Plain Flour (Maida)
  • 1 tsp. of Nigella Seed(Kalonji)
  • 1/2 cup warm Oil
  • Warm Water - just enough to make a dough
  • Salt to taste
  • Oil for deep frying
For the filling:
  • 1 cup boiled Potato cubes
  • 1 cup Green Peas
  • 1 tsp. Cumin Seeds Powder
  • 2 tsp. Coriander Powder
  • 2 tsp. fennel Seeds Powder
  • 1/2 tsp. Turmeric Powder
  • Salt to taste
  • 2 tsp. ginger-Garlic Paste
  • 2 tbsp. Oil
  • 1 tsp. Mustard seeds ( rai / sarson)
  • ½ Onion, grated
  • Heat oil (2 tbsp.) and add mustard seeds. When they splutter, add grated onion, ginger-garlic paste and fry for a minute.
  • Add the dry powders (cumin, coriander, turmeric) and fry for a few seconds.
  • Add boiled potatoes and peas. Mix well. Sauté till the curry turns dry. Keep aside.
  • Mix salt in the flour adds the nigella seeds.
  • Add warm oil and mix well.
  • Now make nice firm dough adding just enough warm water.
  • Make lemon size balls out of the dough. Roll them out into flat round chapattis. Cut each chapatti into half. Each chapatti makes 2 samosas. Fold each piece to make cones.
  • Fill the curry and seal the edges using little water.
  • Deep fry on low flame.
  • Serve the crisp hot samosas with any drink.
