Black Beans & Mexican Rice

Black Beans and Mexican Rice are a great delicious source of energy. Highly consumed in parts of Latin America, they make for a nice filling meal. Treat yourself to a Mexican meal with Black Beans and Rice.

  • 1 teaspoon olive oil
  • 1 onion,, chopped
  • 2 cloves garlic,, minced
  • 1/4 cup uncooked Kohinoor Super Value Basmati rice
  • 1.5 cups low sodium, lowfat vegetable broth
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cayennepepper
  • 3.5 cups cannedblackbeans,, drained

  • Heat the oil, in a stockpot over medium to high flame, 

  • Add onion and garlic and Sauté for 4-5 minutes 

  • Add rice and Sauté for another 2 minutes

  • Add the vegetable broth, bring to a boil, cover and lower the heat and cook for 20 minutes 

  • Add the spices and black beans and let it cook for 5 minutes
